Reuben Bake

Reuben Bake -- A Delicious Sandwich in a casserole dish! Easy and cheesy!! YUM! We are BIG Reuben fans and this just looks delicious!! 

Reuben Crescent Bake

2 tubes (8 ounces each) refrigerated crescent rolls
1 pound sliced Swiss cheese
1-1/4 pounds sliced deli corned beef
1 can (14 ounces) sauerkraut, rinsed and well drained
2/3 cup Thousand Island salad dressing
1 egg white, lightly beaten
3 teaspoons caraway seeds

Unroll one tube of crescent dough into one long rectangle; seal seams and
perforations. Press onto the bottom of a greased 13-in. x 9-in. baking dish. Bake
at 375° for 8-10 minutes or until golden brown. Layer with half of the
cheese and all of the corned beef. Combine sauerkraut and salad dressing; spread
over beef. Top with remaining cheese. On a lightly floured surface, press or
roll second tube of crescent dough into a 13-in. x 9-in. rectangle, sealing seams
and perforations. Place over cheese. Brush with egg white; sprinkle with caraway
seeds. Bake for 12-16 minutes or until heated through and crust is golden
brown. Let stand for 5 minutes before cutting. 

Yield: 8 servings.

Potato Puffs

POTATO PUFFS 
Ingredients
3 cups of mashed potatoes 
2 eggs 
1/3 cup sour cream (optional extra for serving)
1 heaping cup shredded sharp cheddar cheese 
2 tablespoons grated Parmesan 
2 tablespoons chopped chives or parsley
Salt and black pepper, to taste 
Directions Preheat oven to 400 degrees F. Lightly grease with butter 8 - 9 of the wells of a nonstick muffin pan. In a medium mixing bowl whisk the eggs then mix in the sour cream. Stir in both cheeses and the chives.  Add potatoes   and mix well. Spoon them into the pan filling the cups to slightly below the top.   Bake 25- 35 minutes until they pull away from the sides of the cup and are golden brown. Remove from oven and let them cool 5 minutes in pan. Serve with sour cream if desired.

Cauliflower Bread Sticks

If you are trying to get away from Bread…
 
Cauliflower! 

It might be easily passed but this Nutrient Dense cabbage is Low in Fat & Carbs, high in Fibre and Rich in Anti-oxidants... and makes a pretty darn good replacement of bread but it's low carb, gluten free and grain free!

Cauliflower 'bread' Sticks:

1 head of Cauliflower 
1/2 cup shredded Cheese 
2 Eggs, beaten
1 tsp dried Parsley or Oregano or Basil 
2 cloves Garlic, minced 
Onion powder, Salt & Pepper to taste

1. Preheat the oven to 450 degrees.
2. Cut up Cauliflower and steam till soft.. put on a tea towel and blot, try to get as 'dry' as possible.
3. Put in food processor or blend till it's mashed potato texture.
4. In medium bowl stir Cauliflower, Eggs, Cheese, Garlic & Seasonings 
5. Lightly spray baking pan and pat the mixture out.
6. Bake at 450 for 15-20 minutes or until top starts to brown

Cut into bread sticks :D

Zucchini Parmesan Bites

Here's today's yum. Make sure you save it to your timeline so that you always have it.  
Zucchini Parmesan Bites. 

Ingredients
4 medium, fresh zucchini, sliced in half
1/2 cup fresh Parmesan cheese, grated
1-2 tablespoons fresh rosemary & thyme, minced
smidge of olive oil
salt & pepper to taste
Directions

Pre-heat oven to 350F,  lightly brush both sizes of the zucchini with olive oil and place on a foil-lined baking sheet. Mix cheese and herbs together in a small bowl and sprinkle over the zucchini along with salt and pepper to taste. Bake for 15 minutes and place under the broiler for the last 3-5 minutes until cheese is crispy and browned.

Overnight Otmeal

OVERNIGHT OATMEAL

 INGREDIENTS
 1 container (6 oz.) Greek yogurt, any flavor
 1/4 cup uncooked old-fashioned or quick-cooking oats
 1/4 cup fruit (see ideas below)

 Instructions:
 In container with tight-fitting cover, mix yogurt and uncooked oats. Stir in desired fruit.

 Cover; refrigerate at least 8 hours but no longer than 3 days before eating.

Lemony Lemon Brownies

Lemony Lemon Brownies

Ingredients:

1/2 cup unsalted butter, softened
3/4 cup flour
2 eggs, large
2 tbsps lemon zest
2 tbsps lemon juice
3/4 cup granulated sugar
1/4 teaspoon sea salt

For the tart lemon glaze:
4 tbsps lemon juice
8 tsps lemon zest
1 rounded cup powdered sugar

Directions:

1. Preheat the oven to 350 degrees.

2. Grease an 8×8 inch baking dish with butter and set aside.

3. Zest and juice two lemons and set aside.

4. In the bowl of an electric mixture fitted with the paddle attachment, beat the flour, sugar, salt, and softened butter until combined.

5. In a separate bowl, whisk together the eggs, lemon zest, and lemon juice until combined.
6. Pour it into the flour mixture and beat for 2 mins at medium speed until smooth and creamy.

7. Pour into baking dish and bake for 23-25 mins, should turn golden around the edges.

8. Allow to cool completely before glazing. Do not overbake, or the bars will dry.

9. Filter the powdered sugar and whisk with lemon zest and juice.

10. Spread 1/2 the glaze over the brownies with a rubber spatula and let glaze set.

11. Spread 1/2 the glaze over the bars, and let it set (not harden like most).

12. Cut into bars and serve.

Sausage Stuffed Jalapenos

Sausage Stuffed JalapeƱos

1 pound ground Italian sausage (or regular pork or whatever appeals to you)
8 oz cream cheese, softened
1 cup shredded cheddar cheese (original recipe used parmesan)
1 pound jalapenos, halved lengthwise and seeded
1 green onion, finely chopped




Preheat oven to 425 degrees. Place sausage in a skillet over medium heat, and cook until evenly brown. Drain grease. In a bowl, mix the sausage, cream cheese, cheddar cheese, and green onion. Spoon about 1 tablespoon sausage mixture into each jalapeno half. Arrange stuffed halves in a baking dish. Bake 20 minutes in the preheated oven, until bubbly and lightly browned.


***Tips on seeding the jalapenos. 1) Wear gloves throughout the entire process, then remove right after so you don't transfer to sink faucet, cabinet handles, etc. 2) I love my little lemon zester tool for seeding but a small melon baller works great too. 3) As you half and seed the jalapenos, put into a bowl of continuous running water. This helps soften to bake better and removes some heat.***

Things your Mother Shoud have Told you.

THINGS YOUR MOTHER SHOULD HAVE TOLD YOU. 1. Take your bananas apart when you get home from the store. If you leave them connected at the stem, they ripen fas...ter. 2. Store your opened chunks of cheese in aluminum foil. It will stay fresh much longer and not mold! 3. Peppers with 3 bumps on the bottom are sweeter and better for eating. Peppers with 4 bumps on the bottom are firmer and better for cooking. 4. Add a teaspoon of water when frying ground beef. It will help pull the grease away from the meat while cooking. 5. To really make scrambled eggs or omelets rich add a couple of spoonfuls of sour cream, cream cheese, or heavy cream in and then beat them up. 6. For a cool brownie treat, make brownies as directed. Melt Andes mints in double broiler and pour over warm brownies. Let set for a wonderful minty frosting. 7. Add garlic immediately to a recipe if you want a light taste of garlic and at the end of the recipe if your want a stronger taste of garlic. 8. Leftover snickers bars from Halloween make a delicious dessert. Simply chop them up with the food chopper. Peel, core and slice a few apples. Place them in a baking dish and sprinkle the chopped candy bars over the apples. Bake at 350 for 15 minutes!!! Serve alone or with vanilla ice cream. Yummm! 9. Reheat Pizza Heat up leftover pizza in a nonstick skillet on top of the stove, set heat to med-low and heat till warm. This keeps the crust crispy. No soggy micro pizza. I saw this on the cooking channel and it really works. 10. Easy Deviled Eggs Put cooked egg yolks in a zip lock bag. Seal, mash till they are all broken up. Add remainder of ingredients, reseal, keep mashing it up mixing thoroughly, cut the tip of the baggy, squeeze mixture into egg. Just throw bag away when done easy clean up. 11. Expanding Frosting When you buy a container of cake frosting from the store, whip it with your mixer for a few minutes. You can double it in size. You get to frost more cake/cupcakes with the same amount. You also eat less sugar and calories per serving. 12. Reheating refrigerated bread To warm biscuits, pancakes, or muffins that were refrigerated, place them in a microwave with a cup of water. The increased moisture will keep the food moist and help it reheat faster. 13. Newspaper weeds away Start putting in your plants, work the nutrients in your soil. Wet newspapers, put layers around the plants overlapping as you go. Cover with mulch and forget about weeds. No More Mosquitoes Place a dryer sheet in your pocket. It will keep the mosquitoes away. 16. Squirrel Away! To keep squirrels from eating your plants, sprinkle your plants with cayenne pepper. The cayenne pepper doesn't hurt the plant and the squirrels won't come near it. 17. Flexible vacuum To get something out of a heat register or under the fridge add an empty paper towel roll or empty gift wrap roll to your vacuum. It can be bent or flattened to get in narrow openings. 18. Reducing Static Cling Pin a small safety pin to the seam of your slip and you will not have a clingy skirt or dress. Measuring Cups Before you pour sticky substances into a measuring cup, fill with hot water. Dump out the hot water, but don't dry cup. Buy a chalkboard eraser and keep it in the glove box of your car When the windows fog, rub with the eraser! Works better than a cloth! 21. Re-opening envelopes If you seal an envelope and then realize you forgot to include something inside, just place your sealed envelope in the freezer for an hour or two. Viola! It unseals easily. 22. Conditioner Use your hair conditioner to shave your legs. It's cheaper than shaving cream and leaves your legs really smooth. It's also a great way to use up the conditioner you bought but didn't like when you tried it in your hair. 23. Goodbye Fruit Flies To get rid of pesky fruit flies, take a small glass, fill it 1/2' with Apple Cider Vinegar and 2 drops of dish washing liquid; mix well. You will find those flies drawn to the cup and gone forever! 24. Get Rid of Ants Put small piles of cornmeal where you see ants. They eat it, take it 'home,' can't digest it so it kills them. It may take a week or so, especially if it rains, but it works and you don't have the worry about pets or small children being harmed! 25. Dryer Filter Even if you are very diligent about cleaning the lint filter in your dryer it still may be causing you a problem. If you use dryer sheets a waxy build up could be accumulating on the filter causing your dryer to over heat. The solution to this is to clean your filter with with a toothbrush and hot soapy water every 6 months.

Serves: 5-6

Ingredients:
4 cups cooked rice (white or brown)
250gms (½ pound) cooked chicken breast
250gms (½ pound) cooked prawns (shrimp)
250gms (½ pound) diced bacon
1 cup frozen peas, corn & carrots
3 shallots (scallions/green onions) finely sliced
1 white onion, chopped
2 cloves garlic, minced
2 eggs
3 tablespoons sesame oil
¼ cup soy sauce

Instructions:
1. Prepare 4 cups of cooked rice according to package instructions 
2. Heat sesame oil in a large skillet on medium heat.
3. Add onion, garlic, peas, corn, shallots, and carrots. Stir fry until tender.
4. Crack eggs into pan and scramble, mixing throughout vegetables.
5. Add rice, chicken, prawns & bacon to pan. 
6. Stir in soy sauce and remove from heat.

Tip: you can also add

Breakfast Muffins

Breakfast Muffins

Ingredients

3 cups hash browns, thawed
3 tablespoons melted butter
1/8 teaspoon salt
1/8 teaspoon pepper
12 links Johnsonville Original breakfast sausage
6 eggs
2 cups (8 ounces) shredded 4-cheese Mexican blend cheese
1/4 cup chopped red bell pepper
Fresh chives or green onions, chopped

Directions
 
In bowl, combine hash browns, butter, salt and pepper. Press mixture onto bottom and up sides of 12 greased muffin cups. Bake at 400°F for 12 minutes or until lightly browned.
Meanwhile, cook sausage according to package directions; cut into 1/2-inch pieces. Divide sausage among muffin cups.
Combine eggs, cheese and bell pepper. Spoon over sausage. Sprinkle with chives. Bake for 13 to 15 minutes or until set.

Take a box of Angel Food Cake mix (just the contents of the box, no need to follow the directions on the box), & combine it with a 20 ounce can of crushed pineapple in its own juice.
 (No need to use a mixer, just stir it with a spoon) When you do this, something magical happens. 
The mixture starts to froth & it turns into an amazingly airy, fluffy bowl of deliciousness right before your eyes.
 Once it's all mixed up,grease and simply pour it into a 9 x 13 cake pan & bake 350 for 30 minutes

Banana Bites

Crescent Burgers

Crescent Burgers

1 lb hamburger meat
2 cups shredded cheddar cheese
couple drop of Worcestershire sauce
1 pkt dry onion soup mix
1 roll of crescent rolls
1 tsp pepper

Preheat oven to 350*
Brown and drain hamburger. In medium bowl mix hamburger and rest of ingredients (reserve 1/4 cup cheese for tops). Add a HEAPING spoonful of meat mixture to large end of unrolled crescent roll. Roll up and seal edges as best you can. Sprinkle reserved cheese on top and bake for 15 minutes til golden brown.

Garlic Parmesan Wrapped Meatballs.

Meatball wrapped in garlic bread with cheese. And dipped in Marinara Sauce..Oh Dear, Yes Please!
Ingredients:
1 can Pillsbury Grands Jr. Golden Layers refrigerated buttermilk or flaky biscuits
20 frozen cooked Italian-style meatballs (about 5 oz), thawed
4 sticks (1 oz each) string cheese, each cut into 5 pieces
grated Parmesan cheese
teaspoon Italian seasoning
teaspoon garlic powder or garlic salt
1 cup marinara sauce, heated

Directions:
1 Heat oven to 375 degrees F. Separate dough into 10 biscuits. Separate each biscuit into 2 layers. Press each biscuit layer into 3-inch round.
2 Place 1 meatball and 1 string cheese piece in center of each dough round. Wrap dough around meatball and cheese, pressing edges to seal. In ungreased 8- or 9-inch round cake pan, place seam side down in single layer.
3 Sprinkle evenly with Parmesan cheese, Italian seasoning and garlic powder.
4 Bake 20 to 25 minutes or until golden brown and biscuits are no longer doughy in center. Serve warm biscuits with warm marinara sauce for dipping.

Bacon Wrapped Smokies

BACON WRAPPED SMOKIES WITH BROWN SUGAR AND BUTTER

Warning: PARTY FOOD! I guarantee if you make these, they will be gone! I made them for a gathering and 
everyone just kept eating them, and eating them …

Ingredients
1 pound Bacon, Cut Into Thirds
1 pound Lil’ Smokies (small sausages)
1 stick Butter
2 cups Brown Sugar

Preheat oven to 375F.
Cut the bacon into thirds and wrap each smokie.(small sausage)
Place all the wrapped smokies in a single layer in a baking dish.
Then melt the stick of butter and then 1 cup of brown sugar and stir until mixed well.
Pour the butter and brown sugar mixture on the smokies and bacon.
Then take the other cup of brown sugar and sprinkle evenly over the smokies.
Bake them for about 15-20 minutes and then turn the heat up to 400F for about 5 minutes or longer until the bacon becomes crispy.

JANE's Notes:
I have named this cake appropriately because that's what people say when they ask for the recipe. I have an Amish friend named Rosie. She gave me this recipe one day and I didn't believe her at first. I thought she surely forgot an ingredient or two. But, she didn't. This is a moist cake and tasty. No icing is needed so it makes a nice lunchbox dessert.
 
Directions

In bowl, dump dry cake mix, eggs and pie filling. Stir together until well mixed. Bake in greased 9x13, 350 degrees for 35 minutes or test with toothpick for doneness.

NOTE: Pair flavors of cake mix and pie filling. Apple filling with maybe butter pecan cake mix. Cherry pie filling with a devil's food cake mix, etc. I enjoy a pineapple cake mix with blueberry filling.

FOR AN EXTRA INCH TO THE HIPS: Chop room temp cream cheese into chunks. Poke the chunks randomly into the batter after pouring it in the baking pan. Make sure the cheese is in deep. Continue to bake. I do this with a strawberry cake mix and strawberry filling and also the blueberry filling.
